Remove the beef from the wok. Add 2 tablespoons of oil to the wok. When the oil is hot, add the ginger, garlic, and bean mixture. Stir-fry briefly until aromatic. Add the onion, and stir-fry for about 3 minutes. Then add the peppers and stir-fry for 2 to 3 minutes, until crisp tender.
Heat your wok over high heat until it starts to smoke lightly. Add 1 tablespoon of oil around the perimeter of the wok. Add the beef in 1 layer. Sear the beef on both sides until browned, about 2-3 minutes. Turn off the heat, remove the beef from the wok, and set aside.

Trim all visible fat from the beef, wrap in plastic wrap, and place in the freezer for an hour or two to partially freeze. While the meat is in the freezer, combine the soy sauce, water, brown sugar, ground black pepper, sea salt, garlic powder, & onion powder in a bowl or ziplock bag and mix well. In a small bowl, whisk together the sauce ingredients until well combined. Stir in the sauce. Stir the sauce into the pepper steak and heat, stirring, until it thickens in the pan, about 1 minute. Cook and stir. Be sure to keep stirring lightly, as this will help thicken the sauce more evenly, and also helps to coat everything nicely.
Transfer to a slow cooker. Mix bouillon cube with hot water in a separate container until dissolved, then mix in cornstarch until dissolved. Pour into the slow cooker with beef strips. Stir in onion, green peppers, stewed tomatoes, soy sauce, sugar, and salt. Cover, and cook on High for 3 to 4 hours, or on Low for 6 to 8 hours. Heat a pan. Add in some oil. Once hot, add in the sliced onions and garlic. Sauté until aromatic. Add in the carrots, mushrooms, and bell peppers, and other vegetables you’re using. Sauté until cooked. Add the noodles into the pan. Pour in the sauce and mix with the noodles. Leave the noodles to cook for 2-3 minutes.
Instructions. Slice steak against the grain into 2" pieces about 1/4" thick. Place in a bowl and add baking soda, light soy sauce, sesame oil, white pepper, cornstarch, and avocado oil.
